Baked Talapia with Vegetables

6-8   Fillets of talapia

1/2   Sliced mushrooms

1/2   Cup diced onions

2      Medium tomatoes diced very small

1/2   Green pepper sliced very thin and cut the slices in half

1/3   Cup small olives

3      T chopped fresh Basil

2      T olive oil

Salt and pepper

Place the talapia in a baking pan. Evenly cover the fish with the onions, mushrooms, oil, tomatoes, olives, green peppers, basil, salt and pepper. Then drizzle the olive oil evenly over fish and cover baking pan with foil. Bake at 350 degrees for 20 minutes. Vegetables should stay crispy.
